## what is jao
jao is a dry savoury seed-and-fungi topping (not yeast โ deactivated nutritional yeast is a fungus culture, not active brewer's yeast).
you add oil, mix to paste. dense, umami-rich, good on anything.
inside: nutritional yeast + seasonal herbs + more herbs + least-allergic dry seeds (sunflower, pumpkin, chia), crunched + best local salt + unnoticeable tiny bit of strong cayenne.
## how it works
four steps:
๐ซ get jao โ dry mix in jar
๐ซ add oil โ olive, sesame, or soy (unrefined, your choice)
๐ mix to paste โ spoon, stir, your call
๐ฅ eat โ bread, vegetables, garden leaf, fruit salad
surprise pairing: also excellent with ice cream. think salted caramel finish, or finnish salmiakki lip-smacking umami.
## why dry?
no rancidity. no trapped oil. you choose quality. the ritual is yours.
dry: months. mixed with oil: days, keep cool, eat fresh.
